Francy Castillo oversees the Berruecos Project, which brings together parchment from small-scale female producers at her collection point. This project connects remote producers to the specialty coffee market, allowing them to earn premium prices. The initiative focuses on supporting women coffee producers in Nariño through farm visits to assess community needs, providing technical assistance on specialty coffee practices, and offering tools and resources for daily fieldwork. The goal is to foster sustainable development within the coffee industry, improving quality, promoting environmental preservation, and enhancing inclusion and competitiveness, all while benefiting the producers, youth, and women in the community.
PROCESSING
Each women producer involved in this blend lot adheres to a consistent two-step fermentation process to ensure high-quality beans. The cherries are hand-harvested when they reach a ripe, wine-like colour, typically after 3 to 5 weeks of maturation on the tree. To remove damaged cherries, the flotation method is employed.
After this sorting, the cherries undergo the first fermentation stage, lasting 70 hours, while still in their whole cherry form. Following this, a natural depulping occurs, and the cherries, now with some remaining mucilage, undergo a second fermentation in closed tanks for about 60 to 70 hours. This careful and methodical fermentation process contributes to the exceptional flavor profile of the each coffee.
The drying process begins on tarps or concrete patios, where the coffee is exposed to sunlight for 14 to 18 days. After this initial drying period, the beans are stored in sacks and transferred to a collection point, where they are further processed. At this stage, the coffee is placed into burlap bags and stacked on pallets for proper storage. This careful drying and handling process ensures the beans maintain their quality before storage and transportation.
